Apple Blender Pancakes

Make breakfast fun and nutritious with apple blender pancakes. Quick and easy to prepare, these are perfect for kids, blending the natural sweetness of apples into a delicious and wholesome meal.

Ingredients

  • 2 apples

  • ½ cup instant oats

  • ¾ cup plain flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ cup brown sugar

  • 1 egg

  • 2 Tbsp butter, melted

  • ¼ cup milk, or plant-based milk

  • 1 tsp vanilla

  • ½ tsp cinnamon

  • Greek yogurt, for serving

  •  maple syrup for serving

Directions

  1. Grate the apples, including the skin.

  2. In a blender, combine the grated apple, oats, flour, baking powder and soda, sugar, egg, melted butter, milk, vanilla, and cinnamon.

  3. Pulse the mixture a few times until fluffy and bubbly.

  4. Heat a little butter pr oil in a non-stick frying pan.

  5. Add about ¼ cup of mixture for each pancake and cook 2-3 at a time.

  6. Cook 2-3 minutes each side until golden and puffed up.

  7. Serve stacked with a dollop of yogurt and drizzle with maple syrup.

Cook Time: 15 minutes
Makes: 10-12 pancakes
