Apple Blender Pancakes
Make breakfast fun and nutritious with apple blender pancakes. Quick and easy to prepare, these are perfect for kids, blending the natural sweetness of apples into a delicious and wholesome meal.
Ingredients
2 apples
½ cup instant oats
¾ cup plain flour
1 tsp baking powder
½ tsp baking soda
¼ cup brown sugar
1 egg
2 Tbsp butter, melted
¼ cup milk, or plant-based milk
1 tsp vanilla
½ tsp cinnamon
Greek yogurt, for serving
maple syrup for serving
Directions
Grate the apples, including the skin.
In a blender, combine the grated apple, oats, flour, baking powder and soda, sugar, egg, melted butter, milk, vanilla, and cinnamon.
Pulse the mixture a few times until fluffy and bubbly.
Heat a little butter pr oil in a non-stick frying pan.
Add about ¼ cup of mixture for each pancake and cook 2-3 at a time.
Cook 2-3 minutes each side until golden and puffed up.
Serve stacked with a dollop of yogurt and drizzle with maple syrup.
