Apple & Banana Bread

Ingredients
2 apples + extra for serving
2 eggs
1/3 cup plain Greek yogurt
1 tsp vanilla
1/3 cup oil (canola, sunflower, etc.)
1 medium ripe banana, mashed with a fork
1 ¾ cups self-rising flour
1 tsp baking soda
1 tsp cinnamon
½ cup sugar
honey, optional
Directions
Preheat the oven to 350° F and line a medium loaf tin with baking paper.
Core and cut apples in half then dice 1 ½ apple pieces into small dice. Reserve the remaining half for decoration on top.
In a large bowl whisk the eggs, yogurt, vanilla and oil until well blended.
Add the diced apple and mashed banana and mix well.
In another bowl sift the flour, baking soda and cinnamon and stir in the sugar.
Pour the wet ingredients into the dry and mix gently until just combined.
Spoon into the prepared loaf tin.
Cut the remaining apple in half into slices and arrange the slices on top of the loaf, bake for 50-55 minutes or until a skewer is removed cleanly from the center.
Cool before slicing.
To serve, toast a few slices and top with yogurt, apple and drizzle with honey.
